Easy Banana Bread Recipe for Overripe Bananas

You know those bananas.

The ones that started out bright yellow and full of promise and are now sitting on the counter with enough brown spots to make you wonder whether you should throw them away.

Don’t.

Those bananas are exactly what you want for banana bread.

The riper they get, the sweeter and more flavorful they become. This easy banana bread is soft, comforting, and doesn’t require anything fancy.

It’s also a great way to avoid wasting food.

Ingredients

You’ll need:

  • 3 very ripe bananas
  • 1/2 cup melted butter
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon

Optional:

  • 1/2 cup chopped walnuts or pecans
  • 1/2 cup chocolate chips

Get the Oven Ready

Preheat your oven to 350°F.

Grease a standard loaf pan or line it with parchment paper.

If you’ve ever tried to remove banana bread from a pan without preparing it first, you already know why this matters.

Mash the Bananas

Place the bananas in a large bowl.

Mash them with a fork.

They don’t need to be perfectly smooth. A few small pieces of banana are completely fine.

In fact, I like seeing little streaks of banana throughout the finished loaf.

Add the Wet Ingredients

Stir the melted butter into the mashed bananas.

Add the brown sugar, eggs, and vanilla.

Mix until everything is combined.

Add the Dry Ingredients

In another bowl, whisk together the flour, baking soda, salt, and cinnamon.

Add the dry ingredients to the banana mixture.

Stir just until everything comes together.

Don’t keep mixing once you no longer see dry flour.

Overmixing can make the bread heavier than it needs to be.

If you’re adding nuts or chocolate chips, fold them in now.

Bake

Pour the batter into your prepared loaf pan.

Bake until the top is golden and a toothpick inserted into the center comes out mostly clean.

Because ovens vary, start checking toward the end of the expected baking time rather than relying on the clock alone.

Let the loaf cool in the pan for several minutes before transferring it to a wire rack.

What Makes Banana Bread Moist?

The bananas do most of the work.

Very ripe bananas contain plenty of moisture and natural sweetness, which gives the bread its characteristic soft texture.

The butter helps too.

The key is not to overbake it.

Once the center is cooked, take it out. Leaving banana bread in the oven too long can turn a soft loaf into a dry one.

Can You Freeze Banana Bread?

Definitely.

Banana bread freezes very well.

Let the loaf cool completely, then wrap it tightly and place it in a freezer-safe bag or container.

You can freeze the entire loaf or slice it first.

I prefer slices because you can take out exactly what you need.

Let a slice thaw at room temperature or warm it gently before serving.

What If My Bananas Aren’t Very Ripe?

You can still make banana bread, but the flavor won’t be quite as sweet or intense.

If your bananas are yellow with just a few spots, let them sit for another day or two if you can.

And if you’ve got bananas that are already too ripe to eat comfortably, that’s not a problem.

That’s banana bread territory.

Easy Variations

Once you’ve got the basic recipe down, there are plenty of ways to change it.

Add walnuts for crunch.

Add chocolate chips for something sweeter.

Add a little extra cinnamon for a warmer flavor.

Try pecans instead of walnuts.

Add a handful of shredded coconut.

You can even spread a slice with peanut butter while it’s still slightly warm.

That’s a dangerous little upgrade.

The Best Part

Banana bread is one of those recipes that feels bigger than the effort involved.

A few forgotten bananas become breakfast.

Or an afternoon snack.

Or something warm to put on the table when friends come over.

And instead of throwing those overripe bananas away, you get a loaf of something everyone wants a slice of.

That’s a pretty good trade.
