Slice Everything First
This recipe cooks quickly, so have everything ready before you turn on the stove.
Slice the chicken into thin strips.
Slice the peppers and onion into similar-sized pieces.
Keeping everything relatively even helps it cook at about the same rate.
Make the Seasoning
Mix the chili powder, paprika, cumin, garlic powder, onion powder, salt, and pepper in a small bowl.
Add the seasoning to the chicken and toss until well coated.
Cook the Chicken
Heat a large skillet over medium-high heat.
Add a little olive oil.
Cook the chicken in a single layer.
Depending on the size of your pan, you may need to cook it in batches.
Don’t overcrowd the skillet.
If you put too much chicken in at once, it can release moisture and start steaming instead of browning.
Cook until the chicken reaches a safe internal temperature.
Remove it from the skillet and set it aside.
Cook the Peppers and Onions
Add the remaining oil if necessary.
Add the peppers and onions.
Cook until they’re tender but still have a little bite.
If you like darker, more caramelized edges, let them sit in the hot pan for a little longer before stirring.
Bring It Together
Return the chicken to the skillet.
Squeeze fresh lime juice over everything.
Toss together and cook for another minute or two.

Let everyone build their own.
